Cheddar Bay Biscuits with Turkey Sausage Country Gravy


I used to make these Cheddar Bay Biscuits all the time a few years ago and I had forgotten all about them until I was watching an episode of Dinners, Drive-In's and Dives on Friday night (don't judge), and they made cheddar biscuits topped with homemade sausage gravy. What a great idea, why didn't I think of that?! I needed to make it! So the next morning, I did. I know my gravy isn't near as fancy as theirs, but it tastes good and it's homemade so I was happy with it. I used turkey sausage for mine, but of course you can use the real deal. I am slowly starting to work meat back into my diet, but I didn't want to over-do it with these just yet. 

These biscuits are of course great on their own, for any occasion! I am so glad I dug up this recipe again :) 

Ingredients:

Biscuits-
2 cups Bisquick
2/3 cup milk
1/2 cup shredded cheddar (I used a 3 cheddar blend)
1/2 stick or 4 tbs of butter
1/2 tsp garlic powder 

Gravy-
1/2 pound of breakfast sausage (turkey or otherwise)
2 tbs pan drippings or vegetable oil*
2 tbs flour
1 1/2 cups milk 
1 tsp black pepper (I like to use a little more depending on the sausage spice) 
salt 

* If you are making this with regular sausage, you won't need the oil. If you are using turkey, you will need it for the extra fat to make the gravy. 

Method: 

Preheat the oven to 450°

In a medium bowl, combine the Bisquick, milk and cheddar. Mix just until combined; be careful not to over mix, you'll want a fluffy biscuit. 

Drop the dough in golf ball sizes on a baking sheet lined with parchment paper (it will make about 10 biscuits).


 Bake 8-10 minutes or until golden brown. 

While the biscuits are baking, brown your sausage in a deep skillet. Do not drain the fat.

 Add the flour and stir around evenly. Cook for 1 minute then add the milk. If your gravy is too thick at this point, you can add a little more milk at a time until it becomes the consistency you like it. Season with plenty of salt and pepper (taste, taste, taste!). 



Top your biscuit with your gravy and voila! Delicious and easy weekend brunch or breakfast!
